This wine had a short, simple first fermentation harnessing the freshness of the grapes but true complexity, which this wine has, is a long term process. The second fermentation was long and cool allowing the complexities of the grape to emerge with malolactic fermentation offering further depths as it turns the malic acid into the softer lactic acid. This wine has spent 35 months on the lees in the bottle before disgorging. The wine was bottled on 15 June 2015 and disgorged 25 April 2019
Tasting Note: Beautiful bubbles, glorious colour and then the nose . . . . toasty, toasty, toasty which just continues on to the palate with an underlying freshness which lasts forever and ever. It is truly Spectacular. We are very proud.
